    *****Smoked Salmon Canapés******Buttery and flaky, these hors d’oeuvres are like little tarts, only simpler to make.Prep and Cook Time: about 45 minutes, plus 1 1/2 hours of chilling and cooling time. Notes: This dough is the ultimate kitchen workhorse: It’s fast to make and will keep in the freezer for up to a week (let it thaw 1/2 hour before rolling out, or until it’s pliable) or in the refrigerator for 3 days. You can also bake the dough a day ahead and top it just before serving. This recipe can easily be doubled, but if you want to triple or quadruple it, make 2 separate batches of dough.
    Makes 25 servings
    Ingredients
    3/4 cup unsalted butter
    2 1/2 cups all-purpose flour, plus more for rolling
    1/2 teaspoon coarse kosher salt
    1 large egg plus 1 egg yolk
    3 to 4 tbsp. ice water
    2/3 cup crème fraîche
    5 to 6 oz. smoked salmon
    2 1/2 tablespoons brined capers, chopped
    Cut butter into 1/2-in. cubes and freeze in a single layer until very cold, 10 to 20 minutes. In a food processor, whirl flour and salt until blended. Add butter and pulse on and off just until bits of butter are about the size of peas. In a small bowl, lightly beat egg and yolk with 3 tbsp. ice water. Add egg mixture, about half at a time, and pulse just until evenly moistened and holding together (you may need to add 1 more tbsp. ice water as you’re pulsing).Flatten the dough into 2 rough squares, each about 6 in. wide. Wrap squares in wax paper. Chill until cold, at least 1 hour and up to 3 days.
    Preheat oven to 350°. Remove dough from refrigerator and let stand 5 minutes. Unwrap and, on a lightly floured surface, roll dough halves into 1/8-in.-thick squares, 10 to 11 in. each.Transfer each square to a rimmed baking sheet and prick all over with a fork. Bake until medium brown, 25 to 35 minutes. Cool on pan, about 30 minutes. Spread with crème fraîche, dividing evenly, and top with smoked salmon and capers. Cut into 2-in. squares.
    *****Grilled Oysters with Chipotle Glaze*****Prep and Cook Time: about 1 hour. Notes: If glaze stiffens, set it on the hot grill for a minute.
    Makes 8 servings
    Ingredients
    2 tablespoons plus 2 tsp. fresh lime juice
    2 tablespoons olive oil
    1 tablespoon tequila
    1 teaspoon minced cilantro
    1 teaspoon coarse sea salt or kosher salt
    1/4 teaspoon freshly ground black pepper
    24 farm-raised oysters on the half-shell, juices retained
    4 tablespoons unsalted butter, softened
    2 tablespoons mayonnaise
    1 canned chipotle chile in adobo sauce, minced, plus 1 1/2 tsp. sauce
    1 teaspoon minced fresh lime zest
    At least 2 cups rock salt for lining platter
    Canola-oil cooking spray
    Whisk 2 tbsp. lime juice with olive oil, tequila, cilantro, 1/2 tsp. salt, and the pepper in a bowl. Add oysters and their juices, reserving bottom shells. Chill oysters 30 to 45 minutes and then drain, reserving about 1 1/2 cups marinade.
    Meanwhile, soak shells in water for 30 minutes. Drain on a kitchen towel and pat dry. Preheat gas or charcoal grill to very hot (you can hold your hand 1 to 2 in. above the grill only 1 to 2 seconds).In a small bowl, whisk together butter, mayonnaise, chile and sauce, lime zest, remaining 2 tsp. lime juice, and remaining 1/2 tsp. salt. Set glaze aside.
    Spread rock salt over the bottom of a platter large enough to hold oysters in a single layer. Arrange oyster shells on a large baking pan and spray insides lightly with cooking spray.
    Position half of the shells on the grill (place between the bars so they won’t roll over). Heat shells 30 seconds. Spoon 1 oyster into each shell with 1 tbsp. marinade and cook (close lid on gas grill) until juices are bubbling, 2 to 3 minutes. Drizzle a teaspoon of glaze onto each oyster and cook 30 seconds more. Using tongs, carefully transfer oysters to platter and nestle them into the salt. Grill remaining oysters the same way. Serve immediately.
    ******Lemon-Ginger Fried Chicken*****Giving the chicken a double coat of flour mixture creates a golden crust (without the skin) when pan-fried. We use lemon rind instead of the lemon extract called for in the original.
    Yield 4 servings (serving size: 1 breast half, or 1 thigh plus 1 drumstick)
    Ingredients
    1 teaspoon grated lemon rind
    1 cup fresh lemon juice (about 4 lemons)
    2 teaspoons minced peeled fresh ginger
    1 1/2 teaspoons minced garlic
    2 bone-in chicken breast halves, skinned
    2 bone-in chicken thighs, skinned
    2 chicken drumsticks, skinned
    4.5 ounces all-purpose flour (about 1 cup)
    2 teaspoons ground ginger
    1 teaspoon paprika
    1/2 teaspoon ground red pepper
    1 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    1/4 cup peanut oil
    1/4 cup fat-free, less-sodium chicken broth

    pizzas a nice one cos it will keep people from getting extrememly drunk out of the head (sobres slightly) and everyone loves it. also you cant go wrong with doritoes.

    if u are wanting to make them full and save u from buying a lot of food welll try this it’s my moms recipe you need bonless chicken breast stuffing and bacom well u cook the stuffing first. than you cut the raw chicken in half like a hamburger and put the stuffing in between the two pieces. than you wrap the bacon over the chicken and stuffing and put it in the oven on 350 till chicken is done its really good i promise

    You should want to make things people can eat when they want and go back and get more.

    Make things in crock pots so they stay warm and don’t stress you out in the cooking. it is pretty much set it and forget it.

    my advice is get a caterer/personal chef…by the time you have bought all the ingredients and things and spent all that time preparing etc. you could pay a caterer to do it all…..AND to clean it up for you after!
    then you can really enjoy yourself!

    2 cups toasted cereal squares
    2 cups small pretzel twists
    1 cup dry-roasted peanuts
    1 cup (about 20) caramels, unwrapped and coarsely chopped
    1 (12-ounce) package NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels, (butterscotch flavored or vanilla chips)
    Coat 13 x 9-inch baking pan with nonstick cooking spray.
    Combine cereal, pretzels, peanuts and caramels in large bowl.
    Microwave morsels in medium microwave-safe bowl on MEDIUM-HIGH (70%) power (100% power for semi-sweet chocolate morsels) for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Pour over cereal mixture; stir to coat evenly.
    Spread mixture in prepared baking pan; cool for 30 to 45 minutes or until firm. Break into bite-size pieces.
    Makes 8 servings.

    This is a heavy and inexpensive meal that I’ve used for house parties. It’s good so people don’t leave with just alcohol in their system!

    For each batch:
    1 lb. pasta (I like penne)
    Hot Louisiana Sausage (Farmer John, fully cooked) 1/2 package
    1 large can crushed tomatoes
    2 cups chicken broth/stock
    1/2 bottle of beer
    Garlic (as much as you want)
    Onions (as much as you want)
    Hot sauce (to taste)
    1 Bell pepper

    Take off casing from the sausages and slice/dice sausage and cook to brown up (to your liking — it’s already fully cooked) Drain fat and set sausage aside
    Meantime, start boiling water for pasta
    To the skillet from the sausages, add onions, bell peppers and garlic — cook till tender and set aside
    Add 2 -3 tbs. butter, 2 – 3 tbs. flour — cook 2 min., then whisk in 1/2 the bottle of beer (I tried 3/4 bottle once but it didn’t taste as good)
    Add 2 cups chicken broth and lrg. can of crushed tomatoes, hot sauce (I like Tapito)
    Add in the garlic/onions/bell pepper and sausages to the tomato mix and let the flavors mesh together.
    When pasta is done, add the sausage mix with the pasta.

    ** I have served this with a salad on the side, maybe some dinner rolls, etc. …

  • Foods at a house party do best when you can feed a crowd. Here’s a recipe for sloppy joes that I use whenever I am having a big crowd over, especially on a fall kind of day. You can easily double or triple this recipe without affecting the dish.

  • I recommend just buying food rather than cooking it. As a house party involves a lot of food like a buffet so you don’t want to cook all that!! Here are some ideas:
    – sausage rolls
    – cocktail sausages
    – sandwiches

    – fairy cakes
    – biscuits
    – themed cake (chocolate cake, birthday cake etc)
