  • 3 parts oil to 1 part white wine vinegar/lemon juice, mustard, salt & pepper, plus herbs of your choice

  • 1 tablespoon shallot, minced
1/4 cup balsamic or red wine vinegar
    1/2 cup olive oil
    Salt and pepper to taste

In a small bowl, whisk together the shallot, vinegar, oil and salt and pepper.

Serve with a salad or steamed or grilled vegetables. Add minced fresh herbs as desired.

    4 parts of olive oil
1 part of wine vinegar (red or white)
1tsp dijon mustard (English mustard is too strong)
    Salt and pepper

You can substitute the vinegar with lemon juice and you could also add a pinch of mixed herbs or just your favourite herb.
